Bikini

Serves 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Put the listed components into a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the heat allowing it to reach room temperature fully. Pour into a clean bottle, seal and store chilled, it will last for around one month.

For the Cocktail Base: Combine the specified liquids in a large bottle, let it rest for 60 minutes, then filter it preferably using muslin, so it's completely strained.

To serve: Pour 85ml of the batch mix into a cocktail shaker packed with ice, gently stirring carefully for one minute until cold. Pour to a frosted cocktail glass or similar, decorate with a few cranberries adding the final touch using a light spray with the mandarin essence over the top.
